Our process doesn’t accommodate a budget or lighten the load on our backs. It’s a painstaking labor of love. But for us, it’s the only means to crafting the perfect tequila.

Exceptional tequila is born from exceptional agave — and exceptional agave is born here, in the volcanic hills of Jalisco. The rocky, mineral-rich soil here yields agave with a high sugar content, making for rich and smooth tequila.
Nurtured to Maturity

Nurtured to Maturity
Each and every agave plant is carefully placed and nurtured for upwards of seven years. Only when a plant reaches peak maturity is it carefully harvested by our jimadors and prepared for distillation.

Harvested By Skilled Hands
Every morning, our jimadors walk the fields seeking out mature agave for harvest. Trained in our family’s Jicama Jima method, the jimadors use a sharp coa to prune the plant down to its heart, called a piña. The rest of the agave is left behind as compost to keep our land fertile for the next crop.

The selected agave hearts go straight from the fields to our distillery, where they are chopped, stacked and loaded into a stainless steel oven. There, they are slow-cooked for 24 hours in a chemical-free process that preserves the agave’s natural flavors.

Once cooked, the agave hearts are milled into small shreds, which are then gently pressed to release their natural juices.

The agave juice is then combined with our family’s yeast strain and left to ferment for several days. This yeast has been passed down for generations and is one of many secrets that define the unique taste of El Mayor tequila.
Double Distilled for Purity

Double Distilled for Purity
After fermentation, we double distill the agave mixture in copper-lined pots to extract only the richest parts of the spirit and preserve its natural flavor. Some of the finished product is then bottled to become our Blanco expression, while the rest is moved into oak barrels for aging.

We believe patience makes perfect. Our tequila is carefully aged in American white oak barrels, often for longer than industry standards. After anywhere from nine months to well over three years, our Master Distillers taste through every barrel and determine when it’s ready for bottling.
Bottled By Hand

Bottled By Hand
Our tequila is meticulously bottled in our particle-free facility. Bottles are first rinsed with tequila to ensure a consistent taste before being filled and labeled by hand. Finally, each bottle is individually inspected and approved for flawless quality.
